Congolese Cuisine: Makemba

Otherwise known as plantains. This one is simple: just peel and slice any way you want and deep fry in oil. If you cook them slightly unripe, slice thinly and salt before frying and they make nice crunchy plantain chips. My favorite way is shown below, ripe and soft once cooked.
