Happy Thanksgiving

This Thanksgiving is the first one I’ve been able to be together with my husband; our last time having this holiday (married) we were on separate continents. 

Even though we are in Congo, this is an American holiday we will continue to celebrate in our family; mixing Congolese food with American and always remembering to be thankful to the Lord for being our Savior. 

A couple of things I’m especially thankful for today: my husband, my sweet baby girl, my sister Margaret, our comfortable home, clean water, strong soap, good food, charcoal and friendly neighbors.

Weekends

Since many of you don’t have the privilege of knowing Orcxance, I just wanted to share something I wrote down as I am thanking God for him today. 

My Sunday Morning

What my husband did for me this morning:

Tended to the baby during the wee hours
Bought bread for breakfast
Did two loads of laundry
Changed messy diapers
Fed the baby her bottle
Washed the dishes
Swept the yard
Watered the garden
Gave the baby a bath
Washed the baby bottle and accessories
Cooked lunch
Fed the chickens
Bought corn for us

...and all before 1pm. Meanwhile I slept in and then went to church.

The saga of the eel-fish

I don’t know what else to call it except an eel-fish, but my husband brought this great snake like creature back from a trip to the village and we will probably be eating it for the next few days...





We all agreed we wouldn’t be eating the head, not with those nasty teeth anywhere nearby 


Despite its ugly and bizarre looks, it is actually quite good when thoroughly cooked and seasoned!
